Photos: Fairfax Has A Slick New Australian Coffee Shop With Vegemite Shakes

Because there's always room for more delicious coffee, a popular and unique coffee shop from Australia has just landed on Fairfax.

Paramount Coffee Project—yes, PCP for short—just opened this past weekend and they're bringing a unique twist to the typical artisanal coffee fare. Rather than featuring a single coffee roaster, the Australian transplant takes a collaborative approach to the bean by highlighting a rotating cast of international growers and roasters. In addition to featuring their favorites from around the world, PCP will also host residencies where roasters will take over their shop for a week at a time and feature their coffee. Eventually they also hope to offer cupping (aka coffee tasting) classes and other special coffee events.

In addition to a diverse selection of quality coffee, the beautifully-designed shop also features a killer menu from Chef Wilfredo Majano—formerly of Petit Trois and The French Laundry. While sipping your expertly-brewed coffee or Clover juice, you'll also be tempted to check out their all day menu, as well as desserts and pastries from Brentwood's famed Farmshop. Some of the highlights include a char siu pork shoulder roti with fried egg, candied peanuts, pickled ginger and wilted bok choy; the Khao Neow Dam, which features black sticky rice with coconut, mango and berries. And, yes, there is definitely a Vegemite Butterscotch shake—because Australia.

The Fairfax location—just up the road from other Fairfax favorites like Golden State, Canter's and Animal—is PCP's first foray out of Australia. The project was first launched in Sydney in 2013 by friends and fellow coffee nerds Russell Beard, Mark Dundon and Jin Ng.

Mark Dundon, PCP's co-founder, tells LAist, “We’ve noticed a shift in American cafe culture, specifically in Los Angeles, that opened the door for the kind of coffee curiosity the PCP format creates. We look forward to providing a comprehensive coffee experience in an approachable way that encourages people to explore the diversity of specialty coffee.”

The front of the shop features a cozy, open-air alcove where anyone looking for a quick cup can order straight from the window and enjoy a bit of shade on one of the benches. Once inside, you're greeted by a slick mix of concrete counters and cinderblock walls that are softened by light emerald green tiles, blonde-wood furniture and hanging plants. And you'll definitely want to make your way back—passing a wall of coffee and the kitchen—to the more spacious and airy back room with additional seating. There you'll find a beautiful black and green-tiled communal table and a small back patio perfect for catching a breeze while you sip your latte.
