Iron Chef Competitor to Open Grilled Cheese Restaurant on Melrose

Eric Greenspan, a former competitor on The Next Iron Chef and owner of The Foundry, is working towards opening a comforting idea: a restaurant dedicated to grilled cheese. A similar-themed restaurant in Culver City, Meltdown, Etc., closed its doors earlier this year, but that may have been due to odd hours rather than any doubt in the sandwiches popularity (just reminisce on the craziness surrounding last year's Grilled Cheese Invitational--oh yes, Greenspan won that--and the Grilled Cheese Truck).

Greenspan's Grilled Cheese will be located on Melrose next to The Foundry, reports the LA Times Food Blog, The Daily Dish.

By all appearances, it's going to be a foodie porn galore. As described by the Daily Dish, The Champ, which was the winner at the invitational, is short rib with Taleggio and apricot caper puree. The Hippie will be soy cheese, veggies and sprouts stuffed between walnut bread. Confit chicken, bleu cheese and a carrot and celery slaw will make up the Buffalo Chicken.

Greenspan is also considering opening a gordita stand at some point in the future.
