Virtual Happy Hour: Boozy Strawberry Paletas at 1886 Bar

It's muggy as all get out in L.A., so instead of sitting in our A.C.-less Echo Park studio, we decided to, well, get out. That means we're writing this week's Virtual Happy Hour actually at happy hour, bellies pressed firmly against the bar. Those bellies are about to get bigger, considering 1886 has introduced a hybrid of alcohol and we love ice cream">ice cream -- two of our favorite things under the (lack of) L.A sun.
When we first saw our cocktail-loving friend Caroline on Crack posting photos of a boozy Mexican popsicle a few days ago, we knew we were done for.
Head Barman Garrett Mckechnie created the recipe for the paletas, but today Lacey Murillo prepared them using -300 liquid nitrogen to freeze the pops so what then they come out from behind the bar, they're still smoking like dry ice. These adults-only classic Latin American frozen summer treats are made with fresh California strawberries, cream, a healthy dose of Mount Gay white rum, and a whole lot of flare. The beauty of this frozen treat is that you really can taste the booze. And we love the how the brightness of the fresh berries balances out the warm spice of the rum.
There are other winners on 1886's new summer cocktail menu, too -- like the summer shrub fizz or the Southern Belle Whistle made with fresh yellow peaches, floral sweet black tea -- but the strawberry paleta is by far the most unique. Besides, you know how much we love ice cream.
