Mexican wedding cookies, which are basically a pecan shortbread ball rolled around in powdered sugar, have been a staple at our holiday table for as far back as we can remember. But the recipe for these melt-in-your-mouth Latin American treats is admittedly loaded with butter. It never even crossed our mind that you could make these goodies vegan.

Then along came the darling Clara Polito of Clara's Cakes, who schooled us in her recent Vimeo tutorial collabo with Quarrygirl that it can, indeed, be done. Seriously, how is it possible that this 15 year-old is so much cooler than like every adult we know?
