We sure love our food mash-ups here in L.A., and thankfully, we've got a new one in town: the churro ice cream sandwich.

You heard us right. Think two crispy and flattened-out churros, almost like a moist beignet, with scoops of ice cream flavors in the center like horchata, Mexican hot chocolate, vanilla custard and Spanish latte. There are also seasonal flavors like orange creamsicle, panna cotta, and peach cobbler.

The churro ice cream sammie comes by way of Churro Borough, an L.A.-based catering company that is doing some pop-up shops this summer and serving its unique dessert. According to Chow, the company is the brainchild of chef Sylvia Yoo, who's worked in such famous kitchens in New York like Jean-Georges and WD-50.

You can expect Yoo to make some appearances at the LA Street Food Festival on June 28 and at Tasting Table's Lobster Rumble West on August 1.

Just last week, Churro Borough had a pop-up at Ramekin in Los Feliz and posted this photo on Instagram of their blueberry, black sesame and creme fraiche ice cream flavors:

And the best part? There's more in store. Yoo's working on some new churro-inspired ideas as well, like the Churrons, churro-flavored macarons.

At LAist, we believe in journalism without censorship and the right of a free press to speak truth to those in power. Our hard-hitting watchdog reporting on local government, climate, and the ongoing housing and homelessness crisis is trustworthy, independent and freely accessible to everyone thanks to the support of readers like you.

But the game has changed: Congress voted to eliminate funding for public media across the country. Here at LAist that means a loss of $1.7 million in our budget every year. We want to assure you that despite growing threats to free press and free speech, LAist will remain a voice you know and trust. Speaking frankly, the amount of reader support we receive will help determine how strong of a newsroom we are going forward to cover the important news in our community.

We’re asking you to stand up for independent reporting that will not be silenced. With more individuals like you supporting this public service, we can continue to provide essential coverage for Southern Californians that you can’t find anywhere else. Become a monthly member today to help sustain this mission.

Thank you for your generous support and belief in the value of independent news.
