Hannukah is known as the Festival of Lights, but let's get real: It's the festival of latkes. Susan Feniger's STREET is toasting the eight day celebration with a variety of potato pancakes -- a whole lotta them, to be exact.

Through this Saturday, the folks over at STREET will be frying up internationally-inspired potato pancakes that have our mouths watering.

The remaining latkes are as follows: Tonight there will be a zucchini and potato latke with spicy dill cream and eggplant pepper sauce; Friday brings a scalloped potato latke with aged white cheddar and chives; and on the final night of Hanukkah on Saturday Feniger will fry up a lox-inspired red potato latke with smoked salmon, shaved red onion, and horseradish caper cream.

Of course, if you've got family to attend to, we get it. Here's an excellent recipe forluxe latkes with caviar from Petrossian in West Hollywood.
