LAist mini-bites: Try Dtown Pizzeria if you're craving some Detroit pizza
When you think Detroit, do you think pizza? If you've never given it a try — or if you know it well and need a spot in L.A. — we brought in Ryan Ososky to talk about what inspired him to open Dtown Pizzeria in West Hollywood.
About the chef
Ososky is the chef and owner of Dtown Pizzeria. He was named the 2025 Pizza Maker of the Year at the International Pizza Expo. Ososky sat down with Austin Cross, who hosts AirTalk every Friday, to explain what makes his pizza offerings stand out.
What sets Detroit pizza apart?
"The hallmark of Detroit style," Ososky said, "is kind of the cheesy edge, the crownage. It's essentially like a Sicilian focaccia type dough, and it's really that cheesy edge — the frico we call it. The frico sets the style apart."
Restaurant details
- One of a handful of pizzerias in L.A. where someone craving Detroit-style pizza can find what they seek.
- Don't know Detroit-style? Each slice is rectangular in shape, has a thick, chewy crust, and crispy, caramelized cheese edges.
- Ososky first worked in high-end restaurants under the likes of Michael Mina, Charlie Palmer and Wolfgang Puck, before starting a pizza pop-up in West Hollywood.
- The box, Ososky told us, is "fully custom" because the pizza is thicker than regular pizza and they don't want to squish the top.
Menu items we tried
- Goomba (pepperoni, fennel pollen, Parmesan, tomato sauce)
- "Haole" aka not Hawaiian (bacon jam, charred pineapple, pickled jalapeños, Parmesan)
- The 313 (vodka sauce, pesto, Parmesan)
- 1946 cheese ("classic Detroit-style red stripe," oregano, Parmesan, tomato sauce)
