Danish Bakery Copenhagen Pastry Opens in Culver City

While the culinary elite are currently gathering in Denmark for the second MAD Symposium hosted by Rene Redzepi, more humble Danish happenings are going down in Culver City. Copenhagen Pastry opened its doors on Saturday, serving traditional weinbrod like braided water kringle (similar to a cinnamon bun), spandauer (what Americans refer to as Danishes), almond rings (circular shortbread cookies), and rugbrod (rye bread).

Henrik Gram, who served superb spandauer made with featherweight laminated dough and a creamy marzipan custard center at Hygge bakery Downtown, is on board as a consultant for the Culver City project. It might not be the earth-shattering science that's going down at MAD, but the man knows dough. Before moving to the States, his family had worked as bakers in and around Copenhagen since 1971.

Looks like L.A. food writers in attendance will have something to nosh on to remind them of their Danish adventures upon their return.

Copenhagen will be open Monday through Friday from 7:00 a.m.- 5:00 p.m. and weekends from 8:00 a.m.- 4:00 p.m. http://www.copenhagenpastry.com/
