Cool-Down Cocktail: Picca's Chilcano de Anis

The menu at Chef Ricardo Zarate's new restaurant Picca offers an abundance of delicious fresh fish and Peruvian delicacies. Over at the bar, cocktail master Julian Cox developed recipes for several Pisco libations filled with fresh herbs, fruits, and bitters.

In this Chilcano de Anis, Cox combines lime juice, ginger syrup, anise syrup, pisco, soda over crushed ice then tops his creation with mint and a spray of Pernod. The flavors balance spicy, sweet, and sour in a frosty copper mug to make a mouth-watering cocktail perfect to cool down with this summer. ¡Salud!
