This one is an unusual take on a holiday classic. For years a personal obsession has been the peanut butter pie at the Wheel Inn at Cabazon. There have been many disappointments along the way to a duplicate recipe, with versions full of Cool Whip and broken dreams. This recipe seems to really hit the mark and is the closest you can get without a 3-hour drive.

PEANUT BUTTER PIE
1 (8-oz) package cream cheese, softened
1 cup creamy peanut butter
1 cup sugar
1 tablespoon butter, softened
1 teaspoon vanilla extract
1 cup heavy cream, whipped
1 cooked pie crust
Whip cream and set aside.
Mix together cream cheese, peanut butter, sugar, butter and vanilla until light and fluffy.
Gently fold in whipped cream, a third at a time until combined.
Pour into pie crust and refrigerate.
