It seems that Los Angeles either loves or hates Father's Office. Among the reasons why to dislike Sang Yoon's operation: you cannot choose or replace food items. What you get is what you get. No ketchup! If you don't like that, then the recommendation is to not go there. Yoon will not lose sleep.
However, if you want choice in how your food is made or adapted, then you go to The Counter in Santa Monica (other SoCal locations include Irvine and Corona). Here, you make your burgers custom. You get a little clipboard and you get to check off what you want (it looks like this). And yes, they do have veggie burgers. It's also one of Malingering's favorite spots, so she had to share...

The Counter is currently the best burger joint in LA, hands down. It's a great place to go nuts and give yourself the coronary you deserve.
It's my understanding that they're opening more locations, and I hope the quality survives the expansion.

Eh that place is alright. I'm not a fan of thick burgers. Though I loved their churro shake (it was the shake of the month) and french fries.
The burgers are too big (tall) IMO, and fall apart too easily. Lots of interesting choices, yes, but kind of overpriced for what you get. Fantastic sweet potato fries, though - better than Good Stuff Burgers -- and I love Good Stuff's sweet potato fries.
I dont know... Seems to be a little too much SALAD in that burger for me. KnowwhatImean?
The Hula Burger at Island's. Believe it.
Their shakes are fantastic. Their apple pie shake... oh goodness... watch as they take a healthy slice of apple pie... and throw the whole thing in the blender... oh yes. burgers? eh. really. the counter is the cold stone creamery of LA burger joints... it's very exciting that you have so many iterations, to have fun and get exactly what you want. but then 60% of what you put on it ends up on your plate, the burger is under-salted/seasoned... and you have to console yourself with one of the best shakes in LA...
overpriced? try 25 degrees. or not. save your money and go to the hungry cat for their better burger.
the counter burger is about the same price as you would find in your normal sit down restaurant.
