Regarding the brioche, it's quite possible Joan's On Third does something to the brioche for this particular dish. I'm going to trust pink_fish13 since she was actually there to eat it and report back that it was hard. But as you guys say, maybe Joan needs to lighten up on that brioche toasting and keep it soft.
