LAist Cookie Exchange: Almond Florentines

Almond Florentines are one of those holiday treats that I look forward to every Christmas. Light and crunchy, these decadent nibbles are super easy to bake and make a great holiday gift- but watch out, they're also highly addictive!

1 cup butter
1 cup sugar
1/3 cup honey
1/2 cup heavy whipping cream
4-5 cups sliced almonds
1 cup chocolate chips
5-6 aluminum pie plates

Combine butter, sugar, honey, and whipping cream in a saucepan. Heat to a boil over medium heat stirring frequently. Cook 1 1/2-.2 minutes stirring constantly.

Remove from heat. Stir in almonds. Pour into greased pie plates. Spread evenly. Bake at 375 C for 15-20 minutes or until golden brown.

Cool in the fridge for several hours. Remove from pie plates and place on wax paper bottom side up.

Melt chocolate chips in a saucepan. Spread melted chocolate over the bottom of the almond candy. Let cool in the fridge for several hours. Break apart and ENJOY!
