<description>&lt;p&gt;Marshall: Maybe that &quot;lightness&quot; is what accounts for the wide variety of opinions on their food. And it definitely distinguishes their red beans and gumbo from what I cook at home. Because I load mine with as much pork fat as they can hold.

<description>&lt;p&gt;I&apos;ve been eating at Ragin&apos; Cajun a lot lately.  Their food is pretty solid, and it&apos;s a bit lighter than going out for full on Southern food.

I&apos;m really into the giant size hot sauce racks they have at each table.  I haven&apos;t had the catfish fingers yet - now I&apos;ve got a mission.&lt;/p&gt;</description>
