Best Breakfast in LA Might Be in Your Kitchen

We love to talk about breakfast, don't we? Well, why not? It is the most important meal of the day, after all. But sometimes choosing where to go, waiting to be seated, happening on some lousy service, or, worse, some lousy food, makes going out not always the most desirable option. This weekend we realized the best breakfast joint in town was in our kitchen, and we wanted to share it with you. No, no, we don't mean come on over--we want to share our simple, easy, recipe with you for fabulous pancakes. We even went so far as to document it, for anyone who may benefit from a visual aid! So, next time you're in a breakfast pinch you can whip up a batch of these to satisfy your appetite. It's the perfect way to kick off a weekend morning; with Monday's 4th of July holiday, think of how perfect it would be to start your day with a good stick-to-your-ribs breakfast, then move on to the spirited consumption of alcohol! Also, LAist suggests to the less culinarily inclined that you master this one recipe, as it may endear you to that special someone in your life. And for crying out loud, if someone goes to the trouble to woo you with homemade pancakes, pretend for just one day that you eat carbs. It's worth it. Ready?

LAist's Simple Scratch Pancakes:

1 Cup Flour
2 Teaspoons Baking Powder
Pinch of Salt

1 Egg, Beaten
1 Cup Milk
1 Teaspoon Vegetable Oil
Dash of Vanilla Extract (optional)

Sift flour, baking powder and salt in a mixing bowl.

Beat 1 egg, and add to dry ingredients. Mix well.

Slowly add 1 cup of milk and mix completely--best done with a whisk. Add oil and mix again. Add a dash of vanilla (optional).

Pour onto hot, greased griddle on medium heat in 1/4 cupfuls. Cook until bubbles rise and pop (3-5 minutes), flip and cook until browned. Yields 6 3-inch pancakes. Stack, add butter, syrup, powedered sugar, whipped cream etc. and...enjoy!

You can substitute wheat flour, or add in extras like chocolate chips, blueberries, or coconut for variety. And why not? Variety is the spice of life, after all.
