Cooking Highbrow, Craving Low

We couldn’t help but notice mention of a couple local Cali institutions in Jane Levere’s NY Times piece about the remarkably unsophisticated daytime food tastes of contemporary culinary luminaries. Turns out famed New York-based chef Daniel Boulud recently visited the Apple Pan, while French Laundry and Per Se super star chef Thomas Keller relishes the In-N-Out burger—fries—shake—trifecta.

It’s hard to take issue with these choices. The Apple Pan burger isn’t always the cat’s meow (whereas IOHO the pie is), but we’ve rushed many a Cali native to the Sepulveda In-N-Out location within minutes of arriving at LAX.

You've performed a great service by helping people get an immediate Double-Double fix. Once in a while, rumors surface that In-N-Out are going to expand the menu, but it would be business suicide for them to do so. They have a great niche and just need to make sure that they keep the meat fresh, the fries without green bits in them and the shakes the right consistency.
